Flattening Schitzel meat

Unfortunately, Schnitzel can't be cut evenly thick, no matter what kind of meat it used. Therefore, the escalopes are tapped in preparation.

Tap the Schnitzel carefully
Lay the meat flat on an even surface. Put some plastic wrap or a plastic bag on it and beat it gently with the meat tenderizer until the meat is evenly thick. So the escalopes will be cooked evenly and therefore, they remain juicy.
