Filleting carp

Here is shown how to cut a carp into fillets.

Preparing the carp
Wash the carp thoroughly inside and out. Remove the scales against the direction with the back of the knife.
Using a knife
Place a a sharp knife in position of the back and incise the fish carefully. Draw the knife forward to the gills and now, detach the filet from the fish bones.
Filet and carcass
Separate the fillet from the carcass with the knife.
