Amarena cherries

Amarena cherries are a specialty which is known from Italy. First, the cherries are sugared, then they are left to steep and finally, they are cooked. The syrup is refined with amaretto, which is an almond liqueur. The cherries are poured into sterilized jars whilst they are boiling. It is very easily prepared. These homemade Amarena cherries taste particularly good in cakes, tarts and of course with ice cream.

Mixing with sugar
Put the cherries in a saucepan and mix with citric acid, crystal and vanilla sugar. Let the fruit steep and stir the mixture all over again until the sugar has dissolved.
Cooking the cherries
Add the amaretto, bring the cherries to the boil and let simmer for about 15 minutes.
Bottling
Pour the boiling hot cherries into glasses. Immediately close them with the lid, turn them upside down and let them cool.

The Amarena cherries can be stored in a cool and dark place for several months. They go well with many desserts, but they are also a nice gift for many occasions.
