Preparing the filling
Make a shortcrust pastry out of flour, butter, icing sugar and the egg and let the dough chill in the fridge.Wash, peel and halve the apples, remove the cores and cut them into small pieces. Add the gelling sugar, the juice of a lemon, the vanilla sugar, some cinnamon and the raisins. Heat two tablespoons of water in a pot, add the apples and stir well. After one minute, remove the mixtrue from the heat and let it cool.
