Pumpkin Bacon Strudel - puff pastry with spicy pumpkin filling

Pumpkin is a delicious vegetable that you can prepare many dishes with. Stuff it into puff pastry along with bacon cubes, cream cheese and herbs and you have a savory Austrian-style strudel.
instructions
cut the pumpkin
Peel the onion and garlic, chop finely - peel the pumpkin, remove the core and cut into small pieces. Roughly chop two thirds of the pumpkin seeds. Chop the herbs too.
fry the bacon
Fry the bacon in the pan together with the onion and garlic until golden.
Mix the filling
Crack the egg and separate the whites. Mix the pumpkin, cream cheese, chopped pumpkin seeds, herbs, fried bacon, pepper and the egg well in a bowl
fill the puff pastry
Preheat oven to 180°C fan oven. Place on the puff pastry and spread the filling on one third.
Roll up the strudel
Roll up the strudel using the baking paper
prick the puff pastry
Prick the strudel several times with a fork so that the steam can escape during baking and the dough becomes crispy.
sprinkle with pumpkin seeds
Brush the strudel with the egg white and sprinkle with the remaining pumpkin seeds.
bake it
Bake the strudel on the lower rack until golden brown, about 30 minutes.

Cut the pumpkin bacon strudel open and serve immediately hot. Dips and salad go particularly well with this.
