Deep-fried acacia blossoms

Acacia blossoms can be found in springtime, hanging on the trees in long umbels. Their fragrance is indescribably beautiful. They can be dipped in pastry to turn them into dreamlike dessert. Unfortunately, the season for acacia blossoms is quite short. They only occury in the early summertime.

Beating the egg whites
Check the flowers for insects. Remove them, if necessary. Divide the eggs. Beat the egg whites into solid snow. Pour the crystal sugar into the ice cream. Sprinkle it. The ice cream should still be creamy.
Adding the egg yolks
Mix the milk with the flour. Then, gradually, add the egg yolks with to the snow peach. Season with salt.

Lifting the egg whisk
Carefully lift the egg whisk with a snow beaker or the cooking spoon.
Covering the flowers with dough
Heat the fat in a frying pan, so that the flowers can be baked. They need to swim in fat, so don't hesitate to use a lot of it. Dive the flowers into the dough and let them drain shortly.
Deep-frying
Place the flowers in the hot fat and let them bake for five minutes. They are ready when they have gained a golden-yellow panade. Remove and let them drain on kitchen crepe.
Sprinkling with sugar
As long as they are still hot, sprinkle the baked acacia flowers with dust sugar. Serve on preheated plates with fruit pulp.
