2 apples

1 coffeespoon of pie jelly
125ml water
1 tablespoon of lemon juice
100g marzipan used for decoration
5 tablespoons of apricot jam
2 tablespoons of almond flakes

Cake slices with apples and marzipan

Apples and marzipan complete each other wonderfully. The marzipan is not only used as a decoration, but also incorporated into the batter. The apples are pre-steamed with cinnamon and sugar and then draped onto the slices. This dessert tastes very juicy.

Preparing the marzipan
Preheat the oven to 180°C, lay out the baking tray with baking paper. Cut the marzipan into small pieces, stir the butter until foamy, gradually add the marzipan pieces and stir the mixture until it's smooth.
Process the marzipan without chunks, as they will not dissolve in the dough later on.
Producing the dough
Add the sugar and gradually add all the eggs and rum. Sift the flour with baking powder and salt. Lift under the dough. Using a dough card, place one centimeter thick on the prepared sheet. Bake the dough in the oven for 20 minutes until the surface is golden yellow.
Cooking the apples
Wash and peel the apples, cut them in half and remove the core. Slice the fruits and sprinkle them with a little lemon juice. Boil some water with cinnamon and the sugar, the cake jelly and a piece of vanilla pod. Add the apples, remove from the heat and let the fruit simmer. The apples should not be cooked too soft.
Putting together
Cut the batter plate into two equal strips. Mix the jam with two spoons of compote juice and heat it up. Spread a strip with apricot jam and place the second on top. Also coat the top of the cake with jam. Divide the marzipan in half. Sprinkle the work surface with icing sugar, so that the marzipan does not stick while forming and put it onto the cake. Strain the apple slices, place them in between and sprinkle with the rest of the warm jam as a glaze. Sprinkle with the almonds and let it chill.
