The gelling test allows you to check if parboiled fruit will turn out spreadable for jams and cake fillings.

Preparing the gelling test
Take out a spoonful from the boiling jam. The spoon must be clean, otherwise the jam in the glass could begin to ferment.
Putting it on a plate
Make a big dab on a cold dessert plate.
Gelling test
Place the plate in the refrigerator for a few minutes. If you keep the plate at an angle, it should not stream any more. Now it's ensured that the jam in the glass will be stiff enough after cooling.
