In order to receive orange pieces without skin, they are filleted with a sharp knife.

Peeling the orange
Peel the oranges in the way that the whole white skin is removed.
Filleting
Using a sharp vegetable knife, cut out the fillets between the orange peel. Collect the juice that is leaking.
Orange pieces
Keep the orange fillets covered with cling film until further processing. Keep refrigerated.
