Crispy fried Parasol

I love mushrooms. Often I walk in the forest to find them. Parasols can be found in the late summer and autumn. I bread the caps of this mushroom and deed them in hot oil till they are crispy. In Austria we call the Parasol "Schnitzel"- mushroom.
instructions
clean the caps
clean the mushrooms. There may be little insects or dirt on the caps. Remove the stem.
bread the mushrooms
Crag the eggs, season and stir them. Bread the mushrooms in flour, eggs and breadcrumbs
fry the parasols
Heat oil in the pan, fry the mushrooms until crispy on both sides
Crpy fried Parasol
I serve the fried parasol with salad and dips.
