Pumpkin seed crusted cod with roasted sweet potatoes

Naturally fried fish has few calories. It has a crispy crust made from chopped pumpkin seeds and is then baked in the oven. Fried sweet potatoes are the filling and delicious side dish for this fish dish
instructions
Prepare pumpkin seed crust
Roughly chop the pumpkin seeds with a kitchen knife and mix with the breadcrumbs and egg yolks.
Prepare cod fillet
Drizzle the cod with the lemon juice, season with salt and pepper and dredge in flour on both sides.
Cut the pumpkin
Peel onions and chop finely. Cut the dried plums into small pieces. Cut sweet potatoes into small cubes.
fry the fish
Heat oil in the pan, fry the fish on both sides, remove from the pan and keep warm.
Deglaze the fried potatoes
Fry the sweet potatoes, onions and prunes in the roast residue. Deglaze with the red wine and let it boil away. Fill with water, season with salt, pepper and chili flakes. Preheat oven to 200°C fan oven.
Spread pumpkin seed mixture
Place the fish fillet on the sweet potatoes and spread the pumpkin seed mixture on top.
Roast in the oven
Place the pan in the oven on the middle rack. Bake for ten to fifteen minutes; the crust should be golden brown.
Pumpkin seed-crusted cod on sweet potatoes
The fish and fried sweet potatoes are served immediately hot. Salad goes particularly well with this.
