Strawberry Elderflower Blossom Jam

The sweet, delicate flavor of strawberries and the elegant scent of the delicate elderflower blossoms are captured and preserved in this jam quickly and easily. The elderflower blossoms are soaked in orange juice, allowing their aroma to infuse into the juice, which can then be easily combined with the pureed strawberries. The fruit spread is preserved with sugar and then filled into jars and cooked thoroughly. If stored tightly sealed, cool, and preferably in a dark place, these jars provide the wonderful taste of spring for at least six to 12 months.

Elderflower blossoms with orange juice
Check the blossoms and remove any insects that may be present. Halve the oranges, squeeze out the juice, pour it over the blossoms, and let them steep in the refrigerator for at least eight hours.
Sterilize the jars
Sterilize the jars and lids in a pot of boiling water for at least five minutes, then remove them from the water and invert them onto paper towels.
Strain the orange juice
Remove the stems from the strawberries and cut them into pieces. Strain the orange juice through a sieve and add it to the strawberries

Blend the berries with an immersion blender. Depending on preference, blend them to the desired consistency, either leaving small pieces or blending them finely.
Mix fruit puree with the sugar
Transfer the fruit puree to a pot along with the preserving sugar and slowly bring it to a boil. Stir well with a cooking spoon to prevent the jam from burning at the bottom.

Place a spoonful of jam on a chilled plate. If it gels, it's ready to be filled into jars

Immediately pour the finished jam into the prepared jars.
Securely close the jars with lids
Immediately tightly seal the jars with lids and let them cool. This creates a vacuum in the jars, further preserving the fruit spread
Strawberry Elderflower Blossom Jam
The jam will keep for at least six months. The jars should be stored in a cool, dark, and dry place. Over time, the color of the berries may darken to a brownish-gray, so it's best to consume it promptly.
