Here in this recipe, the trout is stuffed with seasoned pumpkin pieces, coated in crushed pumpkin seeds and roasted in the oven. This way, the trout gets crispy and the skin won't stick to the pan. Sometimes it can happen, that the skin is destroyed during the roasting process in a pan.

Cutting the vegetables
Preheat the oven to 160 ° C. Rinse the trout under running water and dab it dry with some kitchen crepe. Peel, cut and chop the onion and the garlic finely. Cut the pumpkin into slices or cubes. Finely chop the parsley.
Seasoning with pepper spice powder
Heat the oil in a pan and fry the onion shortly. Add the paprika powder. Quench the mixture with water and a teaspoon vinegar.
