Apple Strudel with pine nuts

This version of the famous Apple Strudel is made with a cover of shortbread. Roasted pine nuts offer it a special bite and spicing. The preparation of a shortbread Strudel requires some skill, but it tastes very good. The pine nuts need to be roasted so that they can fully unfold their taste

Roasting the pine nuts
Preheat the oven to 180 °. Put the raisins in a glass and let them soak in rum. Slowly fry the pine nuts in a pan. Remove the seeds from the pan. Melt the butter in a frying pan, then fry the breadcrumbs in there. Take them off the stove, prevent burning.

Preparing the filling
Wash and peel the apples, halvethem and remove the kernel casing. Cut the apples into small pieces. Add the sugar, the vanilla sugar and cinnamon and mix them with the crumbs and raisins.
Adding the pine nuts
Add the pine nuts and mix thoroughly.
Spreading the filling
Use a rolling pin toroll the dough on a floured piece of baking paper until it's half a centimeter thick. Spread the filling on one third of the dough.
Cutting the dough
Roll the strudel firmly with the help of the baking paper and place it on the baking tray. Cut the dough regularly with the dough wheel.
Sprinkling with sugar
Place the Strudel on the middle rail of the oven. Let it bake for about 40 minutes. Remove it from the oven and sprinkle it as long as it's warm with some dust sugar.
