Herring salad with beetroot

There are lots of different recipes for herring salad. This pink variety gains its color from diced beetroot. Also potatoes and horseradish is used in this recipe. This herring salad can also be served as a cold fish appetizer. You can prepare it well. Covered with foil, it can be kept in the fridge for a few days.

Mixing the marinade
Stir tigether the mayonnaise, yoghurt, horseradish, pepper and chilli until it's a creamy salad dressing.
Cutting the herring
Strain the herring fillets and remove the toothpicks. Cut the fish into finger-thick pieces and add the pickled onion.
Cutting beetroot
Peel the boiled potatoes. Cut the beetroot and potatoes into three-centimeter cubes. Add all cut ingredients to the dressing.
Mixing the salad
Mix the herring salad well using a spoon.

Keep the herring salad with beetroot chilled until it's served. The salad can also be prepared the day before, so it tastes even better.
