Strawberry jam: fresh strawberries as fruity spread with juicy fruit pieces
instructions
remove shafts
sterilise glasses (see apricot jam)
wash strawberries
remove shafts with sharp knife
crush strawberries
mix strawberries with lemon juice and canning sugar
crush strawberries gently with a fork or a potatoe masher
bring strawberries to boil
put everything into pot and bring it to boil while continous stirring
boil properly for approx. 4-6 minutes
test gelatinizing process
Put one spoon of jam onto plate
It should turn firm in a couple of minutes
Advice: To speed up this process put jam in fridge.

close lid
finished strawberry jam
Turn glasses upside down so that vacuum can develop
store jam chilly and dark, otherwise it quickly loses the colour and turns grey. Therefore it shall be used up in a timely manner.
