Sweet Easter Bunnies made from yeast dough

The scent of freshly baked sweet pastries is simply part of Easter time. The yeast dough can be easily and quickly shaped into various forms, which even children can manage. This makes the preparation and baking process enjoyable and a nice way to get into the Easter spirit. They are perfect for Easter breakfast or a snack, and when nicely packaged, they also make a lovely homemade gift that will surely be enjoyed. The bunnies are formed from three parts and simply glued together. Raisins serve as the eyes. You can easily bake these cute Easter bunnies yourself. I make the dough fresh, but you can also use ready-made yeast dough from the refrigerated section for this.
instructions
mix milk with egg
Warm the milk slightly and melt the butter in it. Separate one egg into yolk and egg white; the leftover egg white will be used for brushing the dough pieces. Crack open the second egg, add it entirely, and whisk it with a fork.
prepare the yeast dough
Mix the flour with the yeast and sugar, add the milk mixture, add salt and lemon flavor, and quickly knead everything with a food processor or hand mixer into a smooth dough that detaches from the edge of the bowl.
let the yeast dough rise.
Transfer the dough to a bowl, cover it with a cloth, and let it rise in a warm place. The volume of the dough should double at least.
cut the dough in pieces
Shape the dough into a roll and cut it with a knife into six equal pieces.
form the body
Divide the dough pieces into three uneven parts. The first piece should consist of 2/3 of the dough. Shape it into a roll and twist it into a spiral. Cut off a quarter from the second piece, shape it into a small ball, moisten it with water, and press it onto the body as the tail.
form the ears
Shape the third piece of dough into a cone. Cut about a third of the way with a knife and gently elongate the ears. Moisten with water and press them onto the body.
brush with egg white
Place the dough pieces on a baking sheet lined with parchment paper and let them rise again. Brush with egg white and sprinkle with pearl sugar. Press a raisin into the dough as an eye in the head.
bake the easter bunnies
Place the baking sheet on the bottom rack in the preheated oven at 200°C (392°F) convection and bake until golden brown.
