Fried cutlet with bacon beans, peppers and tomatoes

I love beans, they have a lot of fiber and are therefore very filling and they contain a lot of vegetable proteins. You can prepare hearty dishes with them. If you use dried beans, they must be soaked in enough water overnight so that their starch can swell again. I use fresh, not yet dried beans, you can also use canned beans. With bacon, pepper pieces and tomato quarters, they not only have a lot of flavor, they also look great. There is also a fried pork chop that is braised together with the beans.

Peel the onion and garlic and chop finely. Cut bacon into fine strips.
cut the tomatoes
Cut the peppers, remove the cores and cut into fine strips. Remove the stalks of the tomatoes and cut into wedges.
Flour the meat
Place the meat on top, season with salt and pepper, cover with foil and flatten evenly thinly with a meat mallet. Dip one side in flour.
fry the meat
Heat oil in the pan, place the meat on the floured side and fry until golden brown on both sides. Remove from the pan and keep warm.
Pour in red wine
Fry onions and strips of bacon in the roasting stock, deglaze with red wine and let the wine cook off.
Add meat
Add the beans, pepper pieces and meat to the pan, deglaze with vegetable stock, season with salt and pepper and braise everything until the beans are soft.
add tomatoes
Add the slices of tomatoes and leave to simmer on the stove for three minutes. You want them to get hot, but not overcook.
