Asparagus is a vegetable where the young parts of the plant are prepared fot the kitchen. Iit is offered white, green and purple in grocery stores. It can be prepared in many ways, but it absolutely has to be peeled. White asparagus is peeled down from the top, the green asparagus is peeled only in the bottom third.
